Curry Poutine Sweet Potato Tots

Serves: 6-8 appetizers
  • 1 bag of sweet potato tater tots
  • 1 tbsp vegetable oil or other neutral oil
  • 1 small onion, diced
  • 1 small handful of cilantro
  • 1 thumb sized piece of ginger, peeled and minced
  • ⅓ cup mild curry paste
  • ½ tsp salt
  • one 15 ounce can crushed tomatoes
  1. Bake tater tots according to package directions. Set aside
  2. While the tots are baking, remove the cilantro leaves and finely chop the stems. Chop the leaves roughly. Dice your onion and peel and mince the ginger. In a medium saucepan over medium heat, add the oil. Add the onion, cilantro stems, and ginger. Saute until the onions are browned, about 10-15 minutes. If they begin to burn, add a splash of water to the pan and continue to cook until browned. Add the curry paste, the salt, and the crushed tomatoes. Stir to combine. Bring to a boil and immediately turn down to a simmer. Simmer about 5 minutes.
  3. Pour the mixture over the cooked tater tots and top with cilantro leaves.
