My friend Storm at Hot Poppy helped me to craft this cocktail! We used 2 oz tequila, 3/4 oz of lemon juice, and 3/4 oz honey syrup. Honey tends to congeal when you add it to cold liquid, so to make honey syrup we combined 1/4 cup honey and 1/4 cup boiling water in a cup and whisked until smooth. Just let it cool and then use it in the cocktail. Top it off with ginger kombucha, or maybe try other flavors. Then add a rosemary sprig. - ¼ cup honey
- ¼ cup boiling water
- 2 oz tequila
- ¾ oz honey syrup
- ¾ oz fresh lemon juice
- ginger kombucha for topping
- rosemary sprig for topping
- Add honey to a small bowl. Whisk in the boiling water until the honey is dissolved. Let it cool.
- Add tequila, ¾ oz honey syrup, and lemon juice to a shaker with ice. Shake then pour into a rocks filled glass. Top off the glass with ginger kombucha and garnish with a sprig of rosemary.
