These greyhounds have been my go-to drink lately. It’s been sunny outside, and there’s nothing better after a long week at work than a frozen drink on the porch (or in my case, the swing).
Sam and I have been planning more of our trip to Europe, booking hotels, renting guidebooks from the library, and spending exorbitant amounts of money. I can’t believe it’s still five months away! I am still Winter Elizabeth, as in I am pale and chubby… I’m welcoming the good weather, because with it comes running in the park and guilt-free pizza eating. We went to a friend’s house this weekend, and they made the most incredible pizza. Homemade pizza is usually meh, but this was so good. I’m going to get the recipe out of him and hopefully share it here. I’ve also been making a lot of perfect ten summer dinners that I can’t wait to share as well.
But for now, you get a drink recipe. Because I’m lazy. And because this is super easy to throw together, and grapefruit juice is so wonderfully bittersweet that you can’t even taste the alcohol in this. The ice crushes up into little pebbles in your drink and makes this beautiful ombre goodness. The basil simple syrup is a nice way to bring an herby sweetness to the drink without simply throwing in torn basil, which gets in your mouth while you drink.
You can juice the grapefruits by hand, but I usually just buy a jug of the organic fresh squeezed grapefruit at the store. It’s the real thing, so it’s just as good.
GREYHOUND SLUSHIE WITH BASIL SIMPLE SYRUP
makes 2 drinks
1/2 cup basil leaves
1/2 cup sugar
1/2 cup water
3 ounces of vodka or gin
2 cups of fresh grapefruit juice
In a small saucepan over medium heat, heat the water, sugar and tear in the basil leaves. Bring to a boil and then simmer for one minute. Let cool for 30 minutes. Pour over strainer to remove basil leaves.
In a blender add the vodka, about 16 ice cubes, 2 tbsp of simple syrup and the grapefruit juice. Blend until frothy and ice is crushed. Pour into ten ounce glasses and garnish with lime juice and a lime wedge.
