There is nothing more comforting on a cold day than a Mexican inspired casserole. This Chicken Tamale Pie is filled with melty cheesy layers of beans, pulled chicken, and roasted chiles and tomatillos for the perfect warming dish. This week, my husband and I have been working on a puzzle at home. There’s not a writers block that can’t be cured by a brisk walk in the snow. Being cooped up inside all weekend, I decided to layer up in whatever clothes I had and venture outside.
